Smoothies
Smoothies are a lovely, refreshing treat. There are so many ways to make them that I won’t even give you a recipe; I don’t want to inhibit your creativity!
Choose some fruit -- (I like to use frozen berries - they’re less expensive this time of year and because they’re frozen, they still have all of their nutrients, unlike some fresh fruit that may be sitting around for awhile before it comes to your store. Bananas freeze well, too! Just peel and break into chunks, put in a plastic bag and throw into the freezer - bananas are good for thickening smoothies without dairy if you have an allergy.)
Add some low-fat yogurt or milk -- (Remember - if you’re using bananas, you mightn’t need the yogurt. Also, Greek yogurt has lots of protein, which is great for growing kids.)
Add a bit of another liquid -- (squeeze an orange, pour in a splash of juice or water. This liquid helps to thin the fruit purée so the Smoothie is drinkable.
Add extras, if you choose: cinnamon, maple syrup, vanilla, coconut milk, flax seed (great way to add Omega-3’s!), soy milk, cocoa powder, ginger, tofu, avocado, nuts, peanut butter... the list is endless.
Remember, you’re the inventor here!

It's time for Christmas Cookies!
INGREDIENTS:
butter, softened, 4 ounces
caster sugar, 2 ounces
plain flour, 6 ounces
teaspoon vanilla
1 medium egg
METHOD:
Preheat oven to 180º C (160º fan oven)
Using a mixer, cream the butter and sugar.
(“Cream” means to beat the butter and sugar until well mixed together and until it’s seems light and fluffy)
Add the vanilla and the egg and beat until well combined.
Mix in the flour using a large spoon.
Pull the dough together with the spoon or your hands and place between 2 sheets of baking paper - sprinkle flour on bottom sheet.
Roll until about 1/2 centimeter thick and remove top sheet of paper - if sticky, sprinkle a little flour over.
Dip your cookie cutter into a little flour - this will help so it doesn’t stick to the dough - and cut out your shapes.
Place on a baking tray lined with a clean sheet of baking paper.
If you are decorating with sprinkles, put these on now. Frosting goes on after they’re baked and cooled.
Bake in oven for 20 minutes, until edges are getting brown.
Let cool.

Pizza Roll-ups (serve warm or cold for lunch) Ingredients: wraps pizza sauce (use tomato/basil pasta sauce) mozzarella cheese (grated) spinach leaves (washed, with excess water removed) Method: Place your wrap on a microwaveable plate. Spread sauce all over. (a few tablespoons) Place 6-10 spinach leaves across the middle. Cover with sprinkled mozzarella cheese. Microwave for 45 seconds, until cheese melts a bit. Carefully roll up. (*sauce & cheese will be hot) Let cool and slice into pieces. |

Cookies INGREDIENTS: 3 bananas - ripe & mashed 1 teaspoon vanilla 1/4 cup vegetable oil (if you can get coconut oil at a health shop, try that - it’s also good and good for you) 2 cups porridge oats 2/3 cup ground almonds 1/3 cup desiccated coconut 1/2 teaspoon cinnamon 1/2 teaspoon salt 1 teaspoon baking powder 100 grams plain chocolate cut into chunks (70%) (can use milk if you prefer, but I think the bite of plain chocolate contrasts well with the sweet cookie) METHOD: Pre-heat oven to 180º C (160º fan) In a large bowl, mash bananas with a fork and/or whisk. Add vanilla and vegetable oil and set aside. In second bowl, combine oats, ground almond, coconut, cinnamon, salt and baking powder. Stir or whisk to combine. Add the dry ingredients into the wet ingredients and stir, combining well. Fold chocolate chunks into mix. Drop large spoonfuls onto baking tray. Bake for approximately 12 minutes. Should feel firm but slightly doughy. Remove to cooling rack. |
